Restaurant Kitchens, Smoking Area,
Bar and Dining Areas

Introduction
A vast variety of odors are found in most restaurants. They emanate from
kitchens, dining areas, toilets and smoking areas.
Very often conventional means of controlling these odours such as chemicals,
simply mask the odour but do not treat or remove them. They also require monthly
contracts be set up between a service company and restaurant owner, which over
the years amount to a considerable cost.
Active
Oxygen based systems actually destroy these odours and leave areas smelling
fresh. The following paragraphs outline how Active Oxygen based solutions can be used in
restaurants.
Industrial Kitchens
Industrial kitchens often have a problem with their ventilation systems.
The majority of the air that passes through the ventilation system is heavy
with grease, and can cause substantial problems for normal filtration
systems, that become clogged and ineffective quickly. Filters are also quite
ineffective against odour. By treating the off-gas with Active Oxygen, both of these
areas can be addressed.
Active Oxygen reacts with the grease in the air thereby reducing the amount of
grease and at the same eliminates odours. The reduced level of grease in the
off gas means that ducts and channels need less cleaning and maintenance
thereby lowering operational costs.
Using Active Oxygen in the kitchen creates a germ free and sanitary environment in which
to prepare food. Active Oxygen in its gaseous form is a far more effective treatment
than conventional cleaning methods as it is able to reach all the areas
typically missed in routine cleaning such as behind fridges, in the grouting
between tiles and underneath counters.
By neutralising bacteria, Active Oxygen also kills all odours including stale cooking
smells, dustbins and drains.
Active Oxygen will keep your fruit and vegetable storage area free from bacteria,
prevent cross-contamination of products and by reacting with ethylene gas exuded
from ripening fruit slows their ripening.
Due to the cleaner and bacteria free kitchen environment, flies and cockroaches
are discouraged.
A combination of equipment can be used in the kitchen. Ozonated water can be
used to wash produce, counters and floors. Gaseous Active Oxygen may be used throughout
the day together with the necessary sensing equipment, or at night as a shock
treatment.
Bar Area
Active Oxygen is very useful in bar areas as it neutralises odours and is especially
effective in ridding these areas of cigarette smoke even if it has permeated the
furnishings.
Active Oxygen is especially useful after a party when the room smells strongly of
cigarettes and alcohol - if the generator is left on in a closed room overnight,
it will completely deodorise the room and furnishings.
An Active Oxygen generator should be permanently installed in a smoking room or bar.
These rooms would become far more appealing to all guests as a result of the
cleaner and more breathable air.
Toilets
Any mildew in moist environments such as the restroom will be treated
as well as unpleasant smells of urine.
These will be deodorised resulting in either an elimination of or greatly
reduced consumption of chemical disinfectant usage.
The use of Active Oxygen in these areas will create the most sanitary environment
possible for clients and guests.
Rubbish Area
Garbage rooms are commonly found close to receiving areas and as such
are a hygiene risk.
Active Oxygen is the most effective way of eliminating this hygiene problem and neutralising unpleasant odours.
A side effect is that through using Active Oxygen, pests such as mites, fleas,
cockroaches, flies and mosquitoes are repelled by the unfavourable germ free
environment.
